FIN’s exciting seasonal menu features the freshest, highest-quality ingredients from New Jersey fishermen and farmers. Choose from modern to classic dishes either “with fins” or “without fins.” The wine and cocktail menus showcase local wines and hand-crafted specialty drinks. Every seat in the relaxing “sea chic” dining room has a view of the ocean. A glass-enclosed Captain’s Table offers private dining for up to 10 people.

In addition to classic sushi and sashimi selections, the bar at FIN offers impressive chef’s platters, maki rolls, specialty rolls, cold seafood appetizers, and freshly shucked oysters. Spectacular two- and three-tiered shellfish towers are also available. Wash down these morsels with a tasty local wine or a specialty cocktail infused with freshly squeezed juices.

FIN’s head chef, Demetrios Haronis, is a South Jersey native and graduate of the Academy of Culinary Arts. A third-generation restaurant operator, he began helping out in his parents’ restaurant at the age of 10. He has worked in many notable restaurants up and down the New Jersey coast. Chef Demetrios draws upon his Mediterranean heritage in executing his vision for FIN, which is “to offer the freshest seafood available from our own shores, paired with locally-grown produce, and served in a relaxing yet refined atmosphere.”

- The newest face at FIN will be a recognizable one to many residents and visitors of the Jersey Shore. George Fleming serves as Gourmet Restaurant Manager for our popular seafood restaurant.
“From Zaberer’s to The Oaks to Ono Pan Asian Bistro, George has managed some of the most well-known and well-respected dining destinations in the region. He possesses an incredible mixture of experience and foresight. Our customers are going to love him and the atmosphere that he creates at FIN,” said Tony Rodio, President and Chief Operating Officer for Tropicana Entertainment Inc.
George Fleming brings 37 years of top-notch culinary management experience to his new post. Having worked in such positions as maintenance and construction manager, banquet and dining manager and general manager, he understands what it takes to keep a restaurant running smoothly and to provide unbeatable customer service.
“Throughout his career, George has established and maintained a fine reputation for both himself and the restaurants he represents,” Rodio continued. “He is a natural-born host who will convert new guests into recurring customers.”
